Marinades for the Grill- August 4, 2008

These are all simple marinades that can be made quickly and served with various meats and seafood. The recent summer evenings have been really great for grill indoors, but if you are not in the mood and of these would work under the broiler as well.

Marinades for the Grill

Marinade for Chicken

Olive oil

Fresh Sage leaves– minced

Fresh Thyme

Fresh Rosemary

Garlic-crushed

Jalapeño peppers– finely chopped

Mix ingredients together. Consistency should be a paste.

Rub on chicken pieces and refrigerate for 2 hours. Grill over med high heat.

Marinade for Beef

Olive Oil

Soy Sauce

Lime Juice

Shallots– minced

Ginger– minced

Garlic– minced

Hot chili sauce

This marinade will be a liquid and should be poured over cut of beef. Refrigerate for 2 hours and grill.

Marinade can be heated through and served over steak.

Shrimp Marinade

1 part Soy Sauce

3 parts Rice wine vinegar

Brown sugar

Sesame oil– regular or hot

Fresh ginger– minced

Fresh garlic– minced

Mix and marinate shrimp for 20-30 minutes. Place shrimp on skewers and grill , basting with the marinade

mixture.
