
Lettuce, Parsley, Mint Salad
This salad speaks SUMMER in volumes. With all the great herbs at the market and the freshness of the greens this is a sure thing. Generous handfuls of parsley and mint leaves are left whole, to hold their own alongside sweet ruffles of Bibb and thin slices of cucumber.
Makes 4 servings
1 tablespoon fresh lemon juice
4 tablespoons extra-virgin olive oil
1 medium head Bibb lettuce, leaves torn if large (6 cups)- any lettuce with a crunch can be substituted
1 1/3 cups packed flat-leaf parsley leaves
2/3 cup packed mint leaves
1/2 cucumber, halved lengthwise and thinly sliced
1/2-1 thinly sliced red onion ( amount to taste– I generally use the whole onion)
Whisk together lemon juice, oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Toss lettuce, herbs, and cucumber with just enough dressing to coat.
